Key Responsibilities As a Production Clerk at dnata Catering, you will play a crucial role in the efficient operation of our aviation catering production line. Your primary responsibility will be to oversee and ensure all CCP’s in the production department are completed accurately and on time. Working in a fast-paced environment, you will collaborate closely with the production team, monitoring the CCP’s. Additionally, you will assist in inventory management, including stock rotation and monitoring ingredient levels to avoid shortages or wastage. Your commitment to maintaining a clean and organized production area will contribute to the overall efficiency and safety of the kitchen. By working closely with the production team and following established procedures, you will help dnata Catering deliver exceptional aviation catering services to our clients.

ESSENTIAL FUNCTIONS AND RESPONSIBILITIES

  • Work with The Current HACCP Program in The Hot Kitchen
  • Check and rotate all production according to FIFO.
  • Help with waste segregation processing for expired product.
  • Check and ensure CCP 3, 4 & 5 Logs are up to date in the Hot/Cold Kitchen Production
  • Review, and check All hot kitchen coolers to Ensure the HACCP Plan Is being followed.
  • Must know all final cooking temperatures for all dishes.
  • Full Understand of cooling processing of cooked foods.
  • Check and ensure CCP2 logs are up to date.
  • Ensure that product taken from HK holding coolers follow the proper SOP.
  • Full understanding of knife log processing and SOP
  • Ensure the label identification with production are color coded.
  • Support All QA Processing in The Hot Kitchen


NONESSENTIAL FUNCTIONS

  • Other duties as assigned by management (i.e., VIP shopping, dish room and equipment and warehouse departments).


This salary range and is influenced by the level of experience. When calculating the base pay, we take into account various factors such as location, qualifications, training, and experience as part of the overall compensation package.

EDUCATION High school diploma or GED with 2+ years’ experience in a high-volume food service with at least 1 year experience in food service and production.

QUALIFICATIONS

  • Flexibility to perform assigned tasks independently or as part of a team.
  • Formal training in food, safety; regulatory compliance a plus
  • HACCP knowledge.
  • Excellent attention to detail and self-organized
  • Ability to deal with a heavy workload.
  • Ability to accurately monitor
  • Flexibility (different shifts - night, weekends, holidays).
  • Attention to detail.
  • Ability to work with tight deadlines.
  • Ability to work effectively with others in a team environment.
  • Strong prioritization skills and the ability to perform multiple tasks.


Intellectual/Social demands

  • While performing the essential functions of this job, the employee is continuously asked to multi-task under time limits. Position requires constant attention to precise details and accuracy of specified standards including following simple to complex (more than 3 steps) instructions, and concentration which frequently extends beyond 30 minutes at a time. This position also requires constant attendance and punctuality - Is consistently at work and on time. Follows instructions, responds to management direction; Takes responsibility for own actions; Completes tasks on time or notifies appropriate person with an alternate plan. Physical demands

  • While performing the duties of this job, the employee is regularly required to stand, walk; reach with hands and arms and stoop, kneel, or crouch. The employee must regularly lift and /or move up to 30 pounds. Safety and Security - Observes safety and security procedures; Reports potentially unsafe conditions; Use equipment and materials properly.


Work environment

  • The essential functions of this position are performed indoors. The noise level in the work environment can range from minimal to loud.
